Keto Pumpkin Pie Cheesecake Crust Ingredients 1 ½ cup Ground Roasted Pecans 2 tbsp granulated erythritol 6 tbsp melted butter https://amzn.to/35It5Ho Filling Ingredients 16oz cream cheese 1 cup Pumpkin Puree https://amzn.to/2owUGum 1 cup Powdered Erythritol https://amzn.to/2oUYEx5 3 large eggs ½ cup heavy whipping cream ½ tsp ginger https://amzn.to/315n5oH ½ tsp cloves https://amzn.to/2Mp33Qo ½ tsp allspice 1 tsp cinnamon https://amzn.to/2OBDHl7 1 tsp Vanilla https://amzn.to/2VPNS7g 1 tsp Almond Flour https://amzn.to/33hZpPl 1 tsp coconut flour Combine Crust ingredients in food processor or blender & pulse until ground and combined. Generously butter a 7” or smaller springform pan. Line the bottom with a piece of parchment paper. Press crust into the bottom. Add all filling ingredients into the food processor or blender except eggs. Once combined add in eggs and pulse until eggs are just combined. Do not over mix. Pour filling over crust. Prepare Instant Pot by putting trivet at the bottom with side arms folded down. Pour in 2 cups of water. Wrap the bottom of cake pan with foil to prevent leaks. Cove the top of cake pan with a couple of folded paper towels followed by aluminum foil. You can make a couple of handles for your cake pan by taking a long piece of aluminum foil and folding it length wise and making a “flat rope” Place the cake pan in the center of it and then use this to lower the cake into the instant pot. Pressure cook on high for 48 min. When finished, allow a natural pressure release. Remove from instant pot and put a fresh piece of aluminum foil on cake. Allow to cool completely on the counter.
